Yummy – Lemon Bars

I am not a cook. I am not a cooker of meals I should say. Dessert – I can compete with the best of them. I love baking homemade desserts. My top three favorites have got to be Coconut Cake (perfect for the holidays and any major dads day – he loves coconut), Cheesecake, and my grandmas Lemon Bars.
So the humor of this is that today during our usual lunch club meeting in the cafe we got to talking and talking turned to joking about how I cannot, for the life of me, cook any type of meat unless it is in a loaf (meatloaf specifically). I am great with pasta, breads, casseroles, veggie based meals, and of course breakfast foods, but meat, meat baffles me. So, in an effort to redeem myself I’ve baked my famous (yes they are already famous office wide because of a birthday celebration a couple of months ago) Lemon Bars.
I think by mid-day tomorrow I will have redeemed myself. Plus with the 100 degree weather here in AZ, a sweet refreshing treat can only do the office good.
